Serve at a temperature of 10-11 ° C in goblets of medium size .
Interesting combination with both dishes based on fish with enough fat sauces or gravies . Do not disdain the medium-aged cheeses and its complexity can be served with white meats such as chicken or turkey with citrus sauce and slightly aromatic . Given the structure and nature of the soil on which lies the vineyard , the wine has good ability of evolution. In his youth has rimarcate balsamic notes which then turn into vegetable with aging.
Curiosity 
The ” crotin ” are old cellars dug into the tuff of which are equipped with almost all the buildings in the Castle Calosso and that welcome visitors in the traditional Fair Rapulè in the fall.
